    Gold represents the radiance of the sky red life. Blue is the color of life, white is the uncreated essence of God, is only used for resurrection and transfiguration of Christ. If you look at the icons of Jesus and Mary: Jesus has a blue coat red garment (God became man) and Mary has a blue underwear with a red over clothing (so that humans could reach be like God), this is the way the doctrine of deification is taught by the iconography.

    It does not really mean anything - it's just a traditional way of representing Mary. Blue might have seemed a good choice because it is the color of the sky, reminiscent of the heavens. Also in ancient mosaics of blue and blue paint is made with floor to lapis lazuli. Lapis lazuli is a rare stone that actually comes from Afghanistan. It was beautiful and expensive and difficult to places like Greece and Italy. So in these days not only used blue paint or blue mosaic pieces for anything - you would use to describe the very special things - like Mary.
