Why the Canon of the Mass changed after Vatican II?

The Canon of the Mass is the oldest part of the Mass dates back to the Apostles. After Vatican II, has been altered in the various options … Sometimes the parent just makes the sentence as it moves into the canon.
The Canon of the Mass used in the following way:
Therefore, merciful Father, we humbly pray, I pray, and through Jesus Christ your Son, our Lord. Hold acceptable and bless + these gifts, these + offerings, these offerings + holy and without blemish, in the first place, we offer you for your holy Catholic Church. Give peace and security, unity and guidance throughout the world, together with your servant (name), our Pope, and (name), our Bishop and all Orthodox believers who appreciate the Catholic and apostolic faith.
Remember, O Lord, thy servants and handmaids (name) and (name), and all here present whose faith and devotion are known to you, on whose behalf we offer to you, or offering themselves to you, this sacrifice of praise for themselves, their families and friends, for the salvation of their souls, and health and welfare they expect, and they now pay homage to you, living and true God everlasting.
In the unity of the Holy Communion is observed memory, first, of the glorious and ever Virgin Mary, Mother of our God and Lord Jesus Christ, also of your Holy Apostles and Martyrs, Peter and Paul, Andrew, James, John, Thomas, James, Philip, Bartholomew, Matthew, Simon and Thaddeus, of Linus, Cletus, Clement, Sixtus, Cornelius, Cyprian, Lawrence, Crisógono, John and Paul, Cosmas and Damian, and all thy saints: for the sake of whose merits and sentences gives you that in all things that can be defended by the help of your protection. Through the same Christ our Lord. Amen.
Therefore, we beseech Thee, O Lord, grace to receive this gift that your staff and with all your family we offer you: Delete the days in your peace, command us to be saved from eternal damnation and numbered among the flock of Your elect. Through Christ our Lord. Amen.
"And Thou, O God, vouchsafe in all respects to bless, consecrate +, + + and adopt this our oblation, to perfect it and make yourself comfortable, so they are for us the Body and Blood + of Your dearly beloved Son , Jesus Christ our Lord.
Who, the day before he suffered took bread in his sacred hands, and he raised his eyes to heaven to Thee, O God, the Father Almighty, thanking you, + blessed it, broke it and gave it to them , saying: Take and eat all of this:
  FOR THIS IS MY BODY
Likewise, after supper, taking also into His holy and venerable hands this cup, good, once again thank you, blessed +, and gave it to his disciples saying: Take and drink ye all of this :
THIS IS THE CUP OF MY BLOOD OF THE NEW AND EVERLASTING Testament, the mystery of faith, for you and will be shed for many for the remission of sins.
As often as they do these things, you have to do in remembrance of me.
Therefore, Sir, we, your servants, as also your holy people, remembering the blessed passion of the Christ, your Son, our Lord, His resurrection from the grave, and his glorious ascension into heaven, offer up your most excellent Majesty , of your own gifts bestowed upon us, a victim +, which is pure, a victim +, which is holy, a victim +, which is stainless, the holy bread + of life eternal and the Chalice + of everlasting salvation.
Deigned to look good and kind attention and maintain acceptable, as you deign to accept the offerings of Abel, your single server, and the sacrifice of Abraham our patriarch, and what your priest Melchizedek offered to you, a holy sacrifice and a spotless victim.
Humbly beseech Thee, Almighty God, the supply of these offerings to be brought by the hands of your holy Angel to thine altar on high, in the face of thy divine majesty, who like many of us who receive the most sacred Body and + + Blood of thy Son, to partake of it on this altar, may be filled with every heavenly blessing and grace. Through the same Christ our Lord. Amen.
Remember also, Lord, your servants and handmaids (name) and (name) who have preceded us with the sign of faith and rest in the sleep of peace.
To these, O Lord, and all others, that in Christ, we beseech thee to grant a place of refreshment, light and peace. Through Christ our Lord. Amen.
To us sinners also, thy servants, trusting in the greatness of thy mercy, deign to grant a part and fellowship with Thy Holy Apostles and Martyrs: with John, Stephen, Matthias, Barnabas, Ignatius, Alexander, Marcellinus, Peter , Felicity, Perpetua, Agatha, Lucy, Agnes, Cecilia, Anastasia, and with all your saints. In their company we implore you to admit us, not weighing our merits, but freely granting us pardon. Through Christ our Lord.

It is a myth or falsehood of the Mass dates back to the Apostles, who never claimed the "power" miraculously turn the wafer and wine into the body and blood of Christ. The Mass is a sacrifice that is repeated again and again, though the Scriptures clearly teach that Christ offered his body once and for all.
