Make "Catholic" and "Protestant" really mean anything?

In the U.S., it seems that "Catholic" almost always means Roman Catholic. Meanwhile, a western (ie non-orthodox) Christian who is not Roman Catholic is "Protestant" by default.   But there are a number of smaller churches that continue to explicitly consider what the Catholic tradition, but not the Vatican (for example, the old Catholic Church). What is the real difference between "Catholic" and "Christian"?

I am sure that the "Christian" is a term that includes all Catholic, Protestant, Orthodox and sects of Christianity. But some people are convinced that there is a difference, so please, if there is a clear difference between the two, please share it. Related posts:

Church of England Services - Are "Catholic"?

I recently visited a mass C of E in Sussex, England and was very happy, very inspiring.   But please help me understand why it was so "Catholic" (holy water, incense, statues of the Virgin Mary, etc etc?   Thank you! (I'm totally new to this) Related posts:
